Random Recipe Monday - Tossed Taco

Ok, this goes down as the laziest dinner ever - or close to it. Saturday night we had my darling baby nephew over to spend the night, so Sunday was about taking it E-Z. I spent the afternoon sewing, practicing my hems and my darts, and the boys (hubby and NR) watched Spider-Man 3 for the zillionth time. Lo and behold, 5:15 pm rolls around and someone says "what's for dinner?" It is at that time that I realize I have nothing planned, nothing thawed and nothing ready. So into the car I go for a quick jaunt to the store. Back home, browning ground turkey and assembling the "tacos", we are dining by 6:00 pm flat. Easy is its main virtue, but if you ever find yourself needing a quick dinner fix, you could do worse.

Tossed Taco (for four)

1 pound ground turkey
1 packet taco seasoning mix
Shredded lettuce
Shredded cheese
Salsa
Guacamole and/or sour cream (Calvados prepackaged guacamole is actually pretty good)
Fritos (Scoops work well)

Fry up the turkey until brown, add the seasoning mix according to package directions. Place a layer of Fritos on your dinner plate, top with 1/2 cup of cooked turkey, a handful of shredded lettuce, a sprinkling of cheese, and your toppings of choice.

Wheee! This is a favorite meal at our house. We use bite-sized Tostitos instead of corn chips because they are lighter and less filling. In ours, the salsa goes on the meat before the veggies, then a squirt of ranch dressing goes on top of the veggies. Sounds odd, tastes great. We call this dish Taco Bell Nasty. Don't know why, but we do.

We also eat Romulan Ear Maggots and Chicken Fried Michelins. Why should a menu sound boring???

Back in the dark ages when Hubby and I were newlyweds, I was cooking a saucepan full of something new. Hubby looked in the pan at the wriggly stuff and asked, "What is THAT?" I told him, and he repeated back what he thought he had heard, "Romulan Ear Maggots????" "No Honey, RAMEN EGG NOODLES!!!" He watched toooo much Star Trek back then. We've called 'em that ever since.

I make REM as a side dish by cutting the required water by 1/2 cup and putting the magic powder in the water to dissolve *before* adding the noodles. (Instructions say to add the seasoning after the noodles are cooked.) After 3 minutes of cooking, they sit for about another 3 minutes until all the water is absorbed. Quick and easy. We love 'em.
